Rolo Cupcakes

I had some extra cupcake mix left over from the Milky Way Midnight cupcakes that I needed to put to good use. While wandering around the candy aisle in Target, I spotted Rolos and thought that would be so yummy in the middle of a cupcake.

All I did was fill cupcake liners and place a Rolo in the center. While those were baking I worked on a caramel frosting.

**Helpful Hint for the Perfectly Fluffy Cupcake: preheat oven to 350 degrees, fill cupcake liners ¾ of the way full, reduce oven temperature to 325 and bake for 25 minutes.

Caramel Frosting

5 ½ tbsp butter

¼ teaspoon salt

1 tsp vanilla extract

3 ½ cups powdered sugar

3 tbsp milk

1.       Cream butter, salt, and vanilla extract together.

2.       Gradually add powdered sugar.

3.       Add milk. Beat until smooth.

To turn this plain vanilla frosting into yummy caramel frosting perfect for Rolo cupcakes, I just added some of the left over homemade caramel sauce. Just mix some in until frosting is as caramel-y as you like!
Let the cupcakes cool, and then frost. Enjoy!
